2 teaspoon curry powder
300 g mushrooms
1/2 teaspoon cumin seeds
1/2 teasppon fenugreek
2 medium onion(s)
3 tablespoon tomato puree
3 quantity roast turkey
1 small pot very low-fat plain yogurt
fry onions in spray oil until brown and soft (about 6 mins), add mushrooms and fry until cooked. Add spices, puree and yoghurt and simmer for 20 mins. Add turkey about 10 mins from end if its cooked from christmas (if raw add after onions)
You can reduce the amount of mushrooms if you prefer as it is quite a bit. I use portabello and chestnut as they have a harder quality. If you like it more liquidy add boiling water as it simmers until its the right consistency.
