Salmon fillets (1 per person), handful of brown rice per person, 1/2 chopped leek, 1/2 chopped pepper, 2 chopped tomatoes, chicken stock cube and boiling water, basil, bayleaf, tbsp sunflower oil, half glass white wine.
Simmer rice in stock cube and boiling water with basil and bayleaf, until soft enough (20-25 mins); top up liquid if necessary. Meanwhile, remove and discard skin from salmon fillets. Slice and cube salmon, chop veges, saute in separate pan. Add everything to the rice pan, including the wine. Add more water if rice still needs it, and season if necessary. (The stock cube will have salt in it anyway.) Remove bayleaf before serving.
Takes about half an hour in total. Totally Core and highly recommended by three boys.
