2 medium Sweet potato(es), raw, dice
1 individual Chilli, Green or Red, finely slice
1 tablespoons Root Ginger, finely chopped
2 clove(s) Garlic, finely chop
1 tablespoons Coriander, fresh, finely chop stalks
1 tablespoons (heaped) Chick Peas, cooked, do not drain, add all
10 g Feta Cheese, crumble before serving
1 teaspoons Lemon Juice, Fresh
1 tablespoons 0% fat natural Greek yogurt
1 teaspoons Fresh Curry Leaves
1 serving(s) Patak's Curry Paste Korma Paste
- Brown sweet potato in oil, add curry leaves, garlic, chilli, ginger, onion, corriander stalks and korma paste - cook for 5-10 mings. Add tin chick peas and jucice, 600ml water and cook for 30 mins.
Cauliflower rice - blitz in food processor and microwave for on full for 7 mins. mix in lemon juice and corriander leaves. Sprinkle feta and corriander and almonds.
