Ingredients

225 g Flour, Wheat, White, Self Raising   
25 g Sugar, Light Brown, granulated   
55 g Sultanas   
25 g Currants   
  150 ml Milk, Skimmed   
1 tablespoons Malt Extract   
1 tablespoons (level) Syrup, Any Type, golden   
5 spray(s) Cooking Spray, Calorie Controlled   

Instructions

  • Preheat the oven to Gas Mark 3/170°C/325°F. Put the flour, sugar and dried fruit in a mixing bowl.

  • Warm the milk, malt extract and Golden Syrup together in a small pan, until the three have blended. If the mixture looks a little curdled, do not worry.

  • Pour the liquid into the bowl and mix together well.

  • Spray a 450g loaf tin with low fat cooking spray.

  • Put the mixture in the tin and smooth it over with a little hot or warm water. Bake in the middle of the oven for between 45 minutes and 1 hour.

  • Leave to cool a little before turning out. When cool, wrap in foil or clingfilm. Leave for a day before slicing.
