Ingredients

200 g Flour, Wheat, White, Plain
|
|
|
2 teaspoons (as purchased) Baking Powder
|
|
|
100 g Sugar, Caster
|
|
|
1 serving(s) Ocean Spray Dried Cranberries
|
|
|
1 medium Egg, Whole
|
|
|
1 teaspoons (level) Vanilla Extract
|
|
|
50 g Spread, Low Fat, melted
|
|
|
100 ml Milk, Skimmed
|
|
|
1 medium Banana, mashed
|
Instructions
- Preheat the oven to Gas Mark 6/200°C/fan oven 180°C. Place 8 paper muffin cases into a muffin tray.
- Sift the flour and baking powder into a large mixing bowl. Stir in the caster sugar and dried cranberries.
- In a jug, beat together the egg, vanilla extract, melted low fat spread and skimmed milk. Stir into the dry ingredients with the mashed banana until just combined. Spoon into the paper cases.
- Bake for 20-25 minutes until risen and golden. Cool on a wire rack.
Notes- It is important not to overmix the ingredients. Simply stir until just combined.
