Baked fennel with goat's cheese

Ingredients

1 spray low-fat cooking spray, low fat
|
|
1 medium portion fennel, 2 small or 1 large bulb, sliced into thin slices lengthways down from the top through the bulb
|
|
|
100 g medium-fat soft goats cheese
|
|
|
2 tablespoon lemon juice
|
|
|
1 portion stock cube, (make 1/3 pint)
|
|
|
1 pinch salt
|
|
|
1/2 teaspoon pepper
|
Instructions
- Preheat the oven to Gas Mark 4/180°C/350°F and spray a medium-sized ovenproof dish with the cooking spray.
- Lay the fennel down in one or two layers in the dish and dot on the goat's cheese. Season and drizzle over the lemon juice and the stock then cover with foil and bake for 10mins.
- Remove the foil and bake a further 10 mins until the fennel is tender and the cheese golden brown in places.
