| You’ll love these easy pizzas – made with a few store cupboard ingredients and some tasty goat’s cheese. |
Ingredients

4 portion crumpet
|
|
1 jar red green or yellow pepper(s), roasted and thoroughly rinsed
|
|
|
1 1/2 tablespoon sun dried tomato paste
|
|
12 portion olives, in brine
|
|
|
75 g goats cheese
|
|
2 teaspoon thyme, or a few sprigs of fresh thyme
|
|
|
1/2 teaspoon pepper, freshly ground, black
|
Instructions
- Preheat grill. Toast crumpets lightly.
- Tear the peppers into smaller pieces.
- Spread each crumpet with 1 tsp sun-dried tomato paste or puree. Top each one with an equal amount of peppers, 3 olives and a slice of goat’s cheese. Add thyme sprigs and season with black pepper.
- Grill for 2 – 3 minutes, until cheese begins to brown and bubble. Serve at once.
Chef Tips- Cook’s tips: Instead of fresh thyme, sprinkle each crumpet with a good pinch of dried mixed Italian herbs. You’re unlikely to need any salt as the cheese and olives are quite salty already.
If you like, substitute muffins for the crumpets – you’ll need 2 muffins, split in half, to serve 4. but remember that muffins are higher in Points than crumpets. Also, if desired you can use 200g of fresh, roasted peppers rather than the ones that come in a jar.
