Bruleed Kiwi and Grape Cheesecakes

Ingredients

4 biscuit(s) Biscuit, Digestive, Low Fat, crushed
|
|
|
4 tablespoons Sherry, Medium
|
|
|
3 medium Kiwi Fruit, peeled and sliced
|
|
|
100 g Grapes, Black or White, (3 1/2oz), seedless red or green
|
|
|
200 g Cheese, Quark, (7 oz) or low fat soft cheese
|
|
|
150 g Yogurt, Virtually Fat Free, Plain, (5 1/2oz)
|
|
|
1/2 teaspoons (level) Vanilla Extract
|
|
|
4 teaspoons Sugar, Light Brown, demerera
|
Instructions
- Sprinkle half the biscuit crumbs into the base of 4 heatproof teacups or ramekin dishes. Sprinkle 1/2 tablespoon of sherry over the top of them.
- Mix together the kiwi fruit and grapes. Spoon half of them into the cups or dishes.
- Beat the cheese in a bowl to soften it, then mix in the yogurt and vanilla extract. Spoon half the mixture over the fruit. Repeat all the layers once more. Cover and chill for 10 minutes, or until almost ready to serve.
- Preheat a hot grill. Sprinkle 1 heaped teaspoon of demerara sugar over each dessert to cover the surface. Grill until the sugar melts and bubbles. Cool for a few moments, then serve.
Notes- Omit the sherry and use 4 tablespoons of unsweetened white grape juice or orange juice instead.
