Creamy, sweet and crunchy, this extra-special porridge is a real winner

Ingredients

Porridge oats

135 g

Skimmed Milk

300 ml

Vanilla pod

½ individual, seeds scraped

Apple

1 medium, skin left on and grated

Pecan Nuts

15 g

Pumpkin Seeds

1 tablespoon(s)

Maple Syrup

1½ tablespoon(s)

Instructions

  1. Combine the oats, milk, vanilla seeds and 450ml water in a large pan over a medium heat and bring to a simmer. Cook, stirring occasionally, for 3 minutes or until the oats are tender and creamy.
  2. Stir in the apple, then remove from the heat and set aside to thicken slightly.
  3. Meanwhile, dry fry the nuts and seeds over a medium heat for 3 minutes, stirring often, until fragrant and toasted.
  4. Serve the porridge topped with the pecans, pumpkin seeds and maple syrup.

Notes

Use ½ tsp ground cinnamon in place of the maple syrup, if you like.
