A great dish for a weekend batch cooking session – serve half and freeze the rest for another day.

Ingredients

Calorie controlled cooking spray

Beef Braising Steak, Lean, raw

500 g, cubed

Onion

1 large, thinly sliced

Carrots, raw

2 medium, peeled and sliced

Garlic

3 clove(s)

Root Ginger

1 teaspoon(s)

Cardamom Pods

3 g, split

Cumin seeds

1 teaspoon(s), level

Curry Powder

3 teaspoon(s)

Paprika

2 teaspoon(s), level

Chilli Powder

1 teaspoon(s), level

Tomato Purèe

2 tablespoon(s), level

Vegetable stock cube

½ cube(s), 300ml stock

Instructions

  1. Heat a large, heavy based, lidded pan over a medium heat. Mist with the cooking spray and cook the beef for 6 minutes until browned all over. Remove the beef and any juices from the pan, then set aside.
  2. Add the onion and carrots to the pan and mist with more cooking spray, stir and cover. Cook the onion and carrots for 5 minutes over a medium heat until softened. Stir occasionally. Add the garlic, ginger, cardamom, cumin seeds, curry powder, paprika, chilli powder and tomato purée and stir to coat the vegetables in the spices.
  3. Return the beef, and any juices, to the pan with the stock and bring to the boil, then reduce the heat to low and part-cover. Simmer gently, stirring occasionally, for 1 hour or until the beef is tender. Season to taste before serving.

Notes

Instead of beef, you could make this curry using turkey or chicken breast. Remember to adjust the SmartPoints.
