Steaming skinless salmon fillets is a quick and healthy way to cook them, and they can be used in lots of delicious ways.

Ingredients

Asparagus, raw

70 g

Salmon, grilled

1 fillet(s), medium, steamed, flaked

Egg, whole, raw

2 medium, raw

Semi Skimmed Milk

1 tablespoon(s)

Chives, Fresh

1 tablespoon(s), handful, chopped

Vegetable Oil

1 teaspoon(s)

Instructions

  1. Blanch the asparagus for 2-3 minutes. Drain and chop. Mix with the flaked salmon fillet.
  2. In a jug, whisk the eggs with the milk. Add a handful of chopped fresh chives and season. Heat the oil in a small frying pan. Pour in the eggs and cook for 3-4 minutes. Spoon the asparagus and salmon over one side, then fold. Cook for 1 minute to warm through, then serve.
