5 Sweet Easter Treat Recipes

Easter comes after Lent, which traditionally means the end of abstinence from your chosen treat.

We all know it is very easy to overindulge particularly with so many temptations around at this time of year, so the following ideas have been put together to enable you to satisfy your sweet tooth - but still keep on track.

Fruity Flakey Knickerbockers
Serves 2
POINTS value per serving: 4
Throw these together in minutes and get two of your 5 A Day too!
  1. Chop 2 small bananas and mix with 110g (4oz) strawberries, hulled and sliced, and 50g (1¾oz) blueberries.
  2. Divide between 2 tall knickerbockers glasses and drizzle each with a tbsp of apple juice.
  3. Mix together 4 tbsp 0% fat Greek yogurt with 2 tsp icing sugar and dollop on top.
  4. Break a Cadbury's flake in 2 and push in to the yogurt. Serve dusted with ½ tsp cocoa.

Honey And Strawberry Chocolate Pots
Serves 2
POINTS value per serving: 5
These are rich and satisfyingly chocolatey!
  1. Hull and roughly chop 110g (4oz) ripe strawberries, then briefly blitz in a food processor. Divide between two 150ml (4floz) ramekins.
  2. Melt 50g (1¾oz) dark 70% cocoa solids chocolate in a bowl over a pan of simmering water and stir in 1 tsp finely grated orange zest.
  3. Separate 1 egg, beating the yolk into the melted chocolate with 1 tbsp runny honey.
  4. Whisk 2 egg whites until they hold stiff peaks then carefully fold the chocolate mixture in. Spoon on top of the strawberries and chill to set.
Orange Crunchy Ice Cream
Serves 4
POINTS value per serving: 3
Quick and easy to make.
  1. Take 8 scoops of low fat vanilla ice cream and mix with the finely grated zest of an orange and 2 roughly chopped Crunchie bars.
  2. Spoon into a freezer container and freeze for at least 30 mins, before serving 2 scoops each.
Chocolate Button Trifle
Serves 6
POINTS value per serving: 4
Lashings of cream and chocolate buttons, a real treat!
  1. Take 12 sponge fingers, break into bite-sized pieces and place in the bottom of a serving bowl. Add a 400g can sliced peaches in juice and leave to soak for 20 mins.
  2. Whip 150ml (5floz) Elmlea light whipping cream alternative until it just holds its shape, then stir in 6 tbsp 0% fat Greek yogurt with 1 tbsp icing sugar.
  3. Spoon over the top of the sponge fingers in dollops and decorate with 50g (1¾oz) Cadbury's chocolate buttons.
  4. Serves 6.
Easter Chocolate Krispies
Serves 12
POINTS value per serving: 2
A great one to make with the kids.
  1. Place 150g (5oz) milk chocolate squares in a pan with 40g (1½oz) reduced fat polyunsaturated margarine and 1 tbsp golden syrup. Warm gently and stir until melted.
  2. Stir in 50g (1¾oz) Rice Krispies, or similar.
  3. Spoon into 12 paper cases, shaping into nests. Leave to set for 1 hour then fill each with 3 Cadbury's mini eggs.
