Ingredients

Calorie controlled cooking spray

5 spray(s)

Quorn Cumberland Sausages

250 g, (pack) cut into slices

Shallots

125 g, and halved

Celery, cooked

2 stick(s), cut into small chunks

Courgette

2 medium, cut into small chunks

Carrots, raw

2 small, cut into small chunks

Tinned Tomatoes

400 g

Vegetable stock cube

1 cube(s), vegetable make up to 300ml / ½ pt with hot water

Paprika

1 tablespoon(s), level

Salt

1 pinch

Black pepper

teaspoon(s), freshly ground

Black eyed beans, dried

400 g, or cannelloni beans, drained

Cornflour

1 tablespoon(s), level

Water

2 tablespoon(s)

Fat Free Natural Fromage Frais

1 tablespoon(s)

Instructions

  1. Heat a large frying pan and spray with the lowfat cooking spray, add the slices of sausage, shallots, celery, courgettes and carrots. Fry over a high heat for 5-6 minutes until lightly browned. Add a little water if necessary to prevent sticking
  2. Add the tomatoes, stock, paprika and season with salt and freshly ground black pepper to taste.
  3. Cover and simmer for 10minutes.
  4. Add the beans and stir through, blend the cornflour with the water and add to the pan.
  5. Bring to the boil, stirring, until the sauce thickens a little.
  6. Cover and simmer for 10minutes, (until vegetables are cooked).
  7. Serve with fromage frais, low-fat crème fraiche or soured cream if desired.
