These fun, bite-sized appetisers are a fun, healthy snack that use courgette rounds as a base instead of bread.

Ingredients

Courgette

2 medium

Calorie controlled cooking spray

4 spray(s)

Garlic granules

½ teaspoon(s)

Salt

½ teaspoon(s)

Cannellini Beans, cooked

1 can(s), large, drained

Tomato

2 medium, deseeded and finely chopped

Shallots

3 medium, finely grated

Lemon

¼ zest(s) of 1

Lemon Juice, Fresh

½ teaspoon(s)

Black pepper

1 pinch

Olive Oil

1 teaspoon(s)

Oregano, fresh

½ teaspoon(s), chopped

Basil, fresh

1 tablespoon(s), thinly sliced, to garnish

Instructions

  1. Slice each courgette into twelve rounds. Using a spoon, carve out a small indentation in each round (do not cut scoop through to other side).
  2. Place the courgette rounds in a single layer on a grill, mist with cooking spray and season with the garlic granules and salt. Grill on High for around 8 minutes, until lightly browned but still firm.
  3. Coarsely mash the beans, then in a medium bowl, mix with the tomatoes, shallots, lemon zest and juice, black pepper, olive oil and oregano.
  4. Divide the bean mixture over the courgette and garnish with basil.

Notes

After the rounds are seasoned with garlic and salt, they're grilled until lightly browned but can still hold their shape. Keep an eye on them while they cook, as grills can vary in heat.
